Bagel Bites, or Zucchini Rounds?

Healthy eating is a challenge. I know that, you know that, we all know that.

I’ve found that the trick to eating semi-healthy is to find a few of your favorite foods (like pizza, for example) and change a few ingredients around to trick your brain into thinking that it is the same food that you have grown up eating when your metabolism was much more rapid than what it is now. Because, for some odd reason, the foods that are the worst for you always taste the best. Funny how life works, right?

If you are anything like me and you crave those dangerous processed foods that somehow always taste so delicious, then try making a smart swap. Try out these yummy zucchini rounds instead of pulling out the dreaded bagel bites box that are crammed in your freezer. I promise, both your body and your taste buds will not regret it!


What you will need:
1 raw zucchini
Shredded cheese of your choice (I used sharp cheddar and mozzarella)
Garlic powder
Salt and pepper

To begin, wash and dry the zucchini. Thinly slice it using a sharp knife and place the pieces onto a baking sheet that is covered with foil. Leave the pieces with little to no space between them.

Sprinkle the slices of zucchini with garlic powder for taste. Follow up this step with salt and pepper.

You will then scatter your choice of cheese over the zucchini rounds. Be sure to cover the tops of the rounds completely for a better and more enjoyable taste!

Place the baking sheet in the oven. Bake for 15-20 minutes, or until golden brown.



And, voilà! Your zucchini rounds are complete. Accompany your meal with a side of low-fat ranch or another dressing of your choice. Chase it down with a water or, if you want to change it up a bit, try out Marketside’s sugar free blueberry green tea to enhance your taste buds a bit more.
